Why does my fuel gauge lie to me?

I was thinking about this whilst filling up with E5 today. It shows me 575miles when the most I can get out of the car is 380 miles. Why does it lie? Is there a way to squeeze these mythical extra miles out of it?

Oops. I meant to put E10 as that's plain unleaded. 

I did discover by accident that if I filled up with E5 (super unleaded) I got more miles. 460 miles I think, was the record. 

I just have to work out if the extra miles are worth the extra cost.
