Dreaded mmi system
Id recommend a diagnostic check to see if any fault codes flag up. You could also speak to an auto electrican. You might find the cheapest option is changing the system for an aftermarket one.

Mpg after dpf removal?
Dpf delete won't increase your mpg that much if at all. If the car is being used for town driving only then this is probably the reason for the low mpg.

EGR delete without DPf delete
You can do, the blanking plates are cheap enough. However you'll probably find you'll end up with an eml on and then will need a remap. Alternatively you can just get a remap that deletes the egr that way if that makes sense. Make sure the remap you use is a rolling road one though. Not a plug in one.

Drivers door won't lock from key fob
I'd recommend an auto electrican to take a look at the wiring for any breaks or corrosion. Alternatively I'd recommend a diagnostic check to see if any fault codes flag up. It could be the drivers door lock module but this should come up on a diagnostic check

A6 C6 Radio/DAB unit replacement
You might find another one could be coded as long as the numbers match. The letter should specify the model variants as all parts are slightly tweaked through the production run. Alternatively you could look at an aftermarket set up

vibration in gearbox
Wouldn't say a vibration to be normal. How long have you had the car? Might be worth you getting a second opinion. Could it be a gearbox mount I wonder?

Gear problems
My mum had a similar issue with a mercedes. It transpired it was a failing synchromesh. Might be worth looking at the gear linkage too.

Retro fit cruise control

Stage 2 map
Was this a plugin map or one done on a rolling road? If it was the former I'd recommend resetting the ECU to original factory settings to see if the issue goes away. The problem with remaps is that it can put extra strain on already worn components.

Softtop repair
I agree with Gareth, it's extreme to need to change the whole roof for a rear window that's coming loose. It often just needs rebonding. I'm sure I've done a guide on it on the forum somewhere, I'll see if I can find it.

2017 a3 1.6 tdi
Was the previous work done by Audi? If so Id like to think there might be some good will. My dad had an 8v 1.6tdi and it blew a turbo at less than 30k.

I'd have said heater matrix as the first port of call. Have you got any wet carpets which could be caused by a leaking matrix? Definitely inspect the expansion tank as these can split especially around where they're joined together. I had that on a works van late last year.

Radiator fan coming on when car has not been driven??
That's shocking on a car less than 5 years old. I'm assuming it's a diesel. And from this my hunch would be that the car ECU thinks the cars doing a regen of the dpf. If you turn a car off during a regen the fans can stay on a little while after. Has your mechanic done a diagnostic check to see if any fault codes flag up at all?

Rs3 bumper to 2012 A3 8P facelift
I believe you'll need the front end. If you end up with the upgraded xenon lights these will need to be coded to your car and you'll need the bumper with headlamp washers.

2004 1.6 A3 Special Edition wiper linkage
You might find more luck for the linkage via VW golf maybe? For example apparently the current polo wiper motor is the same as my old A6 one according to a good friend of mine.

INSTRUMENT CLUSTER 3 BEEPS ISSUE
Can't say I've heard of this. Usually the beeping is joined with an image in the LCD display. Is the LCD display working? On my A6 the only time I've had a similar issue is when the engine was off but I was sat with the radio on. I wondered if it was warning me of low battery?
